Many will start with the A♥ - particularly if match-points.
Having said that, I wouldn't have bid 6♠.

The interesting thing for me is that for making 6 spade one has to overuff the first heart card

Maybe I am missing something but isn't 6♠ always going down even on a ♥ lead if South holds up the ♦A for three rounds?

No, he doesn't LOL!!
Declarer switches to ♣ small to the 10 if south plays low (♣ King drops under the Ace on next round of ♣) and small to the Ace if south plays the King. When, or if north wins with the Q of ♣, he can do nothing as he will not have any more ♦ (after 2 previous rounds) so he either has to play a ♥ (ruff-sluff) and ♦ loser goes away) or 4th ♣ and declarers ♦ loser goes away. It takes a ♣ lead to defeat the 6 ♠ contract.

I have read about this type of coup in "Right Through the Pack". The author refers to this as "The Robert Coup", and this is also in The Encyclopedia of Bridge by this name. So this would be called a Robert Coup.
